chickenwaffletacoWe just love Chicken and Waffles. You can make them so many ways. Why not make them a taco?!?! If you are not up to making homemade Waffles or Chix tenders you can always use pre made. Ok heres’s the Chocolate Chip Waffle recipe

2 eggs

2 cups all-purpose flour

1 3/4 cups milk

1/2 cup vegetable oil

1 tablespoon white sugar

4 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

3/4 cup mini chocolate chips

Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Stir in Chips
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.

Chicken Tenders

2 lbs boneless skinless chicken breast cut into strips

2 cups flour
garlic powder all to taste
2 eggs
1/2 cup milk

Mix seasonings with flour set aside

Mix eggs and milk with whisk or fork.

I use a deep fryer with canola oil

Dip strips into egg mixture , then flour coat well
Return to egg bath and then again into flour
Once oil has reached 375 – 400 drop in until golden brown,, about 5 mins

Place strip in waffle fold top with Maple Syrup!

If you are from the Chicago area, you are very familiar with A nice juicy Italian Beef sandwich!!! There are all kinds of recipes on the web. Most use Italian dressing? Ummm might be good but, not what I’m talking about! It’s all about the cut of beef, the rub, and slicing it paper thin.Here is the real deal Italian Beef recipe!

What you  need

A good appetite…

2 – 4 lb beef roast  I prefer top round


1 tablespoon ground black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed red pepper

6 cups hot water

4 cubes of beef bouillon

Aunt Milles or Turano are some good local choices for the rolls.

Pre heat oven to 400 degrees

Mix the seasonings and rub all over generously. Seriously coat it!IBEEF1 You will have some left over, save.

Using a 13 x 9 pan add hot water. Bring to a boil on stove burner. Add bouillon cubes, until dissolved, now add remaining seasoning. Place roast ABOVE liquid on a rack in side of pan. Bake 20 mins per pound or inside temp is 130. Remove from oven. let cool slightly, then refrigerate for 3 hours, This is a must!  After roast has chilled, slice paper thin using a meat slicer. Heat au jus until it comes to a boil, turn down add meat simmer for about 1 min. IBEEF2

If you like you can also saute some green peppers to add to the beef.

Serve with some mozzarella cheese!!!


Jamaican Jerk Chicken Panini with baby Spinach Sunday, Mar 10 2013 


I am loving the Panini Maker!! Seems you can toss anything on it and it tastes good!! I love the challenge of  making the next one taste better then the last one! I guess you can say I am on the quest for the perfect panini Todays came pretty close!!! I baked an extra large chicken breast heavily seasoned with Jamaican Jerk for about 45 min. While that was baking I mixed a cup of mayo with about 1 TBS jerk seasoning. Let it set so the flavor soaks in good. Sliced the cooked chicken some what thin ( made 2 sammies)  top with some baby spinach and mozz spread a heaping coat of the jerk mayo on top bread . Popped in the panini maker for several mins and OMG YUM!!!!
