These lovely tenders can be used in so many ways!! Chopped up and added to a salad. Stand alone with a rice side dish. The list goes on … They must be marinated for at least 8 hours ahead of time to utilize the maximum flavor.

Heres the marinade recipe. I used boneless skinless breast cut into strips.

1/2 cup olive oil

3 cloves garlic chopped

1 Tablespoon each Rosemary, Thyme and Oregano

Juice from 2 lemons

Mix together place chicken in for 8 hours or over night. Heat skillet on med high. Add chicken strips, brown and turn down to med, cook until juices run clear.

Garlic and Herb Pork Roast Sunday, Mar 16 2014 

porkYummm juicy, tender, flavorful pork! That’s what you will get with this one. Make sure you leave the fat on upside for the juice to return back into the meat!!

1 (4-pound) boneless pork loin, with fat left on

1 tablespoon salt

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves

1 teaspoon dried basil or 2 teaspoons fresh basil leaves

1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary

Preheat oven to 475 degrees F.Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat.Roast the pork for 30 minutes, then reduce the heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.

chickenwaffletacoWe just love Chicken and Waffles. You can make them so many ways. Why not make them a taco?!?! If you are not up to making homemade Waffles or Chix tenders you can always use pre made. Ok heres’s the Chocolate Chip Waffle recipe

2 eggs

2 cups all-purpose flour

1 3/4 cups milk

1/2 cup vegetable oil

1 tablespoon white sugar

4 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

3/4 cup mini chocolate chips

Directions
Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Stir in Chips
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.

Chicken Tenders

2 lbs boneless skinless chicken breast cut into strips

2 cups flour
salt
pepper
garlic powder all to taste
2 eggs
1/2 cup milk

Mix seasonings with flour set aside

Mix eggs and milk with whisk or fork.

I use a deep fryer with canola oil

Dip strips into egg mixture , then flour coat well
Return to egg bath and then again into flour
Once oil has reached 375 – 400 drop in until golden brown,, about 5 mins

Place strip in waffle fold top with Maple Syrup!

Hooters variation can also be used

Fork Tender Cubed Steak! Thursday, Feb 27 2014

Oh these are quite delish!!! Serve with noodles, baked potato, maybe rice. Side of veggies, maybe  salad! Ok here is what you will need.

4 good sized cubed steaks

1 cup flour

1 pkg lipton onion soup mix

salt pepper

oil

1 Preheat oven to 350
Heat olive oil in large (cast iron works best) skillet on med-med/high heat.
2 Mix flour, salt & pepper (I prefer fresh ground) in pie plate. Dredge cubed steaks in flour mixture.
Brown steaks maybe 5 min. per side – turning over a few times.
3 Place cooked cubed steaks in deep casserole dish. Drain oil from skillet, reserving steak/flour
residue. Mix soup mix with 2 C. water, turning heat higher, whisking to loosen browned bits in skillet.
(I sometimes add some of the leftover flour at this time…mixture does not need to be thick as it thickens in the oven).
Pour this mixture over cubed steaks.

Bake, uncovered, for 1 hour. Makes its own gravy!

Whats better then steak??? BACON! What’s better then bacon??? Bacon wrapped in steak!! Oh my !! We love to buy a whole round of beef and do with it what we want. Love the fresh ground beef we get Can make it virtually fat free! So in our 30 lbs of beef we managed to slice up some very thin sandwich steaks. So thats where it started. Take very thinly sliced steaks lay bacon op top roll them up. I did several variations. Added some fresh veggies in there.. Cauliflower, carrots, broccoli. Extra bacon, Wrapped in bacon!!! Side this with some potato nachos and good to go!!!

What’s better then pork??? Pork wrapped in pork!!! Haha Love this pork roast, it is so juicy and flavorful! Simple 

1 PORK ROAST 

8 SLICES BACON

LAWRYS SEASONING

Basket weave 8 slices of bacon 4 x 4 in out you know. I do these on a large piece of parchment, foil, ziploc whatever you have handy. Sprinkle seasoing on roast , Carefully flip the woven bacon on top or roast.Bake 425 for about 2 hours, or until tender and bacon is crisp!!
