Golden Eagle Syrup Candied Pecans Sunday, Jul 24 2016 

I recently had the pleasure of trying a new syrup .Golden Eagle Syrup made in Alabama.As a candy maker I’m always looking for new products to try. I welcomed the challenge of creating something with it. The syrup is not what someone from the north/ Midwest (like me) is use to. We have maple or corn syrup.Golden Eagle is a unique flavor.I would call it a honey syrup. So making these pecans was taking a basic candied pecan recipe up a notch 😉

Super simple to whip up!

1/4 cup Golden Eagle Syrup

1/8 cup sugar

1/8 cup butter

1 1/2 cup pecan halves

Sea salt 

Spray with non stick spray and heat skillet on medium high heat. Add butter, sugar, and syrup. Blend well,add pecans and stir and toss constantly. Cook for 4 mins. Keep a close eye on them. If syrup starts to darken too much they will burn. Pour out on to parchment paper.. Sprinkle with sea salt. Let cool and set about 1 hour.

These are great to snack or top an arugala strawberry salad.

Dorito Crusted Stuffed Chicken Breast Thursday, Jul 14 2016 

Ohhh I have to say these are amazing!! Besides being super yummy, they are easy to make. Just a few ingredients. Oh and there baked so you save those calories for some Chocolate 🙂 I used my Nu Wave but oven baked works as well.

3 large chicken breast

2 cups Doritos ( fine crumbs I used a rolling pin)

8 oz cream cheese softened

2 green onions finely chopped

The chicken breast is some what tricky to prepare. Use a thin very sharp knife. Begin at one end of breast slice across but not all the way thru the chicken. Continue to make cuts about 1/2 inch apart. Prepare all breasts this way.

Add onion to softened cream cheese. Beat until easy to spread. Using a butter knife or spoon full each slice full of cream cheese. About 1 tsp into each cut. 

Place dorito crumbs in zip lock. Place filled breast into crumbs carefully coating .one piece at a time .

Place on greased baking sheet. Bake at 350 for 35-40 mins. Or 13-15 mins in the nuwave

Serves well with salad
