This is a great versatile recipe. Fairly simple and quick.

1 egglant sliced
1 onion chopped
Garlic
Salt pepper
1 lb ground beef, pork, or sausage
4 cups puree tomato
1 cup vegetable broth
1/2 cup couscous
Parmesan cheese
4 Tablespoon oil

Preheat oven to 400. Places sliced eggplant in single layer on cookie sheet. Drizzle with 2 tablespoons oil. Salt pepper. Bake 7 min. Turn oven down to 350.
In got skillet add 2 tablespoons oil onion and garlic. Cool about 5 min. Add meat cook until no longer pink.
In medium saucepan add tomato puree and broth. Bring to a boil stirring often. Add couscous. Let set 10 min.
In 13×9 pan begin layers. Sauce, squash ,  meat. Repeat layers with sauce on top. Bake 25 mins. Sprinkle with Parmesan bake 5 mins longer.
