It’s so easy Peanut Butter Reese Pie Monday, Sep 28 2015 


Makes you want to dive right in!! That delectable chocolate peanut butter combination, in pie form! So easy to make!! Here’s what you need
3/4 cup Graham cracker crumbs ( pre made works)
1/8 cup sugar
2 Tab melted butter
1 large box instant vanilla pudding
2 cups milk
1/2 cup peanut butter
1/2 cup melted chocolate chips (for garnish)
Mini reeses ( for garnish)

Mix crumbs, sugar, and melted butter. Press in bottom and sides of pie dish.
Mix pudding and milk. Blend in peanut butter. Pour into crust. Chill about 30 mins. Add  reeses and drizzle melted chocolate.
Chocolate crust can also be used.


Coucous Casserole Tuesday, Sep 22 2015 


This is a great versatile recipe. Fairly simple and quick.

1 egglant sliced
1 onion chopped
Salt pepper
1 lb ground beef, pork, or sausage
4 cups puree tomato
1 cup vegetable broth
1/2 cup couscous
Parmesan cheese
4 Tablespoon oil

Preheat oven to 400. Places sliced eggplant in single layer on cookie sheet. Drizzle with 2 tablespoons oil. Salt pepper. Bake 7 min. Turn oven down to 350.
In got skillet add 2 tablespoons oil onion and garlic. Cool about 5 min. Add meat cook until no longer pink.
In medium saucepan add tomato puree and broth. Bring to a boil stirring often. Add couscous. Let set 10 min.
In 13×9 pan begin layers. Sauce, squash ,  meat. Repeat layers with sauce on top. Bake 25 mins. Sprinkle with Parmesan bake 5 mins longer.
