I love fish! Especially in the summer. Makes for a very light meal after a nice hot summer day! Salmon is one of my favorites. So versatile! This one is super easy and quick. The rub can also be used on just about any kind of meat.
4 -5 fresh salmon filets
The run
1 Tablespoon celery salt
1 Tablespoon got chili powder
1 Tablespoon nutmeg
1Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon pepper
1 Tablespoon sugar
Mix seasonings. Rub on filets let sit 10 mins. Add 1 -2 tablespoons oil to skillet  Pan sear in hot skillet 3-4 mins each side.

Crock Pot Green Beans and Bacon Wednesday, Jul 22 2015

Snap gotta love the sound of a fresh green bean snapping!! Ok the first couple dozen are fun! Then it’s time to enlist the help of the kiddos! Here we have beans and bacon. Yum!
2 lbs fresh green beans. Ends snapped off
6-7 slices bacon . cut up
Garlic sea salt
Pepper
2 Tablespoons shortening.
Add all to crock. Set on low for 7 – 8 hours or until beans are tender.

Who needs potato chips? Satisfy that salt craving with a healthy alternative this summer! Kale is bountiful and fresh! So for my vegan daughter here’s what we whipped up!
A bunch of kale. Remove stem cut into 2 inch pieces.
Tablespoon olive oil
Lemon Zest sea salt
Spread pieces do not overlap on micro safe plate. Drizzle with olive oil sprinkle with sea salt. Micro for 2 – 2 1/2 min or until crisp. Repeat with remaining kale!

Double Chocolate Chip Muffins

Yessss Chocolate for breakfast is acceptable! When it’s in muffin form of course. These decadent little morsels are super easy and bake up quick. Now if you follow any of my recipes I always demand a high quality chocolate! Some things can get by with cheaper ingredients. Chocolate, butter, coffee. Its necessary to go for quality!  Ok here’s what you’re looking for!
Preheat oven to 400. Line a 12 piece muffin pan.
1 3/4 cup flour
2 Tablespoons cocoa (the good stuff)
2 teaspoons baking powder
2/2 teaspoon baking soda
3/4 cup sugar
1 1/4 cup chocolate chips ( yes the good stuff again)
1 cup milk
1/3 plus  Tablespoons oil
1 egg
1 teaspoon vanilla
Use 2 bowls. Add all dry ingredients in one. Whisk.
Mix all wet ingredients with whisk. Pour into dry. Mix until blended. Do not over mix  pour into liners. Bake 20 mins
