Chocolate Cashew Pie Sunday, Mar 8 2015

Ohh not much better then sweet and salty!!! This is the perfect combo of those two glorious things. I went with a pre made crust for a very simple to make pie! Small slices for this one ohh and top it with some chocolate covered cashews and fresh whipped cream. Cup of good coffee and youre all set 🙂

Here you go….
1 pre made pie crust ( i like to buy in bulk at gfs and keep in freezer)
Preheat oven to 325
3/4 cup corn syrup
1/2 sugar
3 tbs melted butter
3 eggs
1 tsp vanilla
1 cup cashews
1 cup mini chocolate chips
Whisk together corn syrup, sugar,butter,egg,and vanilla. Stir in nuts and chocolate chips. Spread in pie crust bake 55-60 mins. or until set. Cool 2 hours in fridge. If desired melt 2 tbs chocolate chips. Dip about 10 -12 whole cashews 1 at a time until coated. Place on wax paper. Chill  garnish  pie.  Serve with whipped cream.

Pani Popo Hawaiian Rolls Friday, Mar 6 2015

Its been a long cold winter!! So Ive been on a bread baking binge. What better then some sweet Hawaiian bread!! Ahhh Hawaii. Ok getting off topic here. this recipe if for a large batch. Great for family gatherings or pop the extra in freezer. Makes 24 rolls –  2 13×9 pans.
Here we go

6 cups flour

2 1/4 cup + 2 Tbs milk
1 pkg yeast or 1 1/2 tsp
1 tbs butter
1 tsp salt
1 Tbs sugar plus 1 cup to mix with co v onut milk later.
2 cans coconut milk.

Add 3 cups flour to bowl. Add yeast s alt and 1 tbs sugar. In small saucepan heat milk and butter to 100 dgrees. Just until butter starts to melt. Add to flour mixture. Combine and add remaining flour gradually.  Knead about 8 mins. Place in buttered bowl. Turn dough over so dough is  covered in butter. Keep in warm place  45 mins until double. Punch down dough divide into 24 balls. Place into 2 greased 13×9 pans. Let rise again 20 mins or until double.Mix 2 cans coconut milk with 1 cup sugar, pour over dough.Bake bake 375 for 25 -30 mins. Or gloden brown. Brush tops with melted butter.

Layered Peanut butter pudding dessert Wednesday, Mar 4 2015

Oh this is some amazing stuff!!! Very addictive. It can be very versatile. Any flavor pudding can be used. I know youre drooling,so here you go!
Crust
1 cup flour
1/2 cup butter cold cubed
1 cup cashews chopped
Pb filling
8 oz cream cheese
1/2 cup peanut butter
1 cup powdered sugar
1 cup cool whip
Pudding layer
2 boxes instant chocolate pudding
2 2/3 cup milk
Cool whip layer
Remainder if cool whip container.
2/3 cup mini chocolate chips.
1/2 cup cashew

In food processor add flour butter. Mix til crumbly. Add cashews pulse couple times.
Press into bottom of greased 13 x  9 bake 350 for 25 mins. Cook on wire rack.
Mix together soft cream cheese,pb and powdered sugar. Blend well fold in thawed cool whip. Spread on top of crust.
Mix pudding and milk for 2 mins with wisk. Let set 2 mins. Pour on top of pb layer. Spread evenly. Top e ith remaining cool whip. Sprinkle nuts and choc chips on top. Chill
