These are sooo tender and juicy! Sealed with  a crust to retain the flavor! I bought a whole pork loin, Cut into small medallions and flattened.

1 whole pork loin cut up

2 cups panko bread crumbs




2 eggs

1/2 cup milk 14 cup oil

Add oil to skillet, heat on med high heat.

After flattening The medallions ( and kind of chop can be used) mix egg and milk together. Add seasoning to breadcrumbs in another bowl. Dip pork in mixture of egg then into crumbs. Return to egg and then to breadcrumbs. Add to hot skillet. Once brown turn to low med heat  cover and cook for about 10 15 more mins.
