Well it’s Spring. Or at least according the calendar, it’s suppose to be… I was in the  mood for something pretty. I love pink and green together. Strawberry and Kiwi unite in this decadent cake! It is strawberry cake layered with a beautiful Kiwi Cheesecake in the middle. What kind of frosting goes with Strawberry Cake ?? Kiwi cream cheese of course!! So let’s get started and get this beauty going!! 

Strawberry Cake Recipe

2 cups white sugar
1 cup butter, softened

4 eggs (room temperature)

2 3/4 cups sifted cake flour

2 1/2 teaspoons baking powder

1 cup whole milk, room temperature

1 tablespoon vanilla extract

2 tsp Strawberry Extract
1/2 cup strawberry jam

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
In a large bowl, cream together the butter, sugar and until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour and baking powder; stir into the batter alternately with the milk. Blend in vanilla , strawbery extract and strawberry puree. Divide the batter evenly between the prepared pans.
Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the center of the cake comes out clean. Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.

KIWI Cheesecake

Cheesecake:
2 (8-ounce) packages cream cheese, softened
1/2 cup sugar
3 eggs
1/2 cup sour cream
1 tsp vanilla extract
 1/2 DAVINCI GOURMET Kiwi Syrup  can be found here  http://www.davincigourmet.com

Preheat oven to 325 degrees F. Line a 9-inch round baking pan with parchment paper. Let the edges extend over sides of pan and then spray the foil with non-stick cooking spray.

In large bowl, beat cream cheese, sugar and vanilla extract at medium speed with an electric mixer until creamy and smooth. Whisk eggs in a bowl; add to cream cheese mixture. Blend just until eggs are incorporated. Stir in sour cream.

Pour batter into prepared pan. Bake for 45 minutes, or until the top just starts to turn golden.

 

Let the cheesecake cool completely in its pan on a wire rack then cover and chill for 4 hours.

KIWI Frosting

8 ounces unsalted butter, softened

 8 ounces cream cheese, softened

 4 – 5  cups powdered sugar

 1 teaspoon vanilla extract

1/2 Davinci Gourmet Kiwi syrup

In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract and kiwi syrup.

Place strawberry cake on platter, frost, place cheesecake on top, frost, place remaining cake on top and frost top and sides!
