Lemon chicken asparagus stir fry Wednesday, Apr 16 2014 






This stir fry is fairly simple and OMG good!

1 pound cubed chicken breast 

1 pound fresh asparagus

juice from 1 lemon 

1 can cream of chicken soup

sea salt 


soy sauce

heat skillet with oil to coat bottom. Add chicken brown. About 3 mins each side. Add asparagus cook for a few more mins. Add the rest of ingredients and coo additional 10 mins . Serve over rice



Chocolate Strawberry Torte! Tuesday, Apr 15 2014

Cut each after cooled into 2 . I have a bread slicer that works perfect for this. The filling recipe is
2 pkgs cream cheese softened
1/4 cup cream half n half works well
1 small pkg Chocolate fudge Jello pudding
2 cups fresh strawberries sliced
On med speed beat cream cheese for 2 min slowly add cream. On low stir in pudding mix. Beat about 2 more mins. Fold in berries.

Panko Pork Loin Chops Monday, Apr 14 2014 



These are sooo tender and juicy! Sealed with  a crust to retain the flavor! I bought a whole pork loin, Cut into small medallions and flattened.

1 whole pork loin cut up

2 cups panko bread crumbs




2 eggs

1/2 cup milk 14 cup oil

Add oil to skillet, heat on med high heat.

After flattening The medallions ( and kind of chop can be used) mix egg and milk together. Add seasoning to breadcrumbs in another bowl. Dip pork in mixture of egg then into crumbs. Return to egg and then to breadcrumbs. Add to hot skillet. Once brown turn to low med heat  cover and cook for about 10 15 more mins.

Kiwi Lime Sugar Cookies Monday, Apr 7 2014 

kiwicookieHere’s a snappy little cookie. Little sweet sour,, Davinci Gourmet syrup strikes again! This is a pretty simple one. Heres the recipe…

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 cup butter, softened

1 1/2 cups white sugar

1 egg

1 teaspoon vanilla extract

1/4 cup Davinci Gourmet Syrup

4 tsp Lime juice

These would also be good with some frosting….. next time…

Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.


Banana Split Topped Pudding Pie Monday, Apr 7 2014 

pieMmmm Chocolate Pudding Pie!! Oh yea let;s not forget the Banana Split Topping!! Of course it’s not complete with out a cherry on top!! Ok here’s what you need!

1 Pie Crust, graham cracker will work also. If using a premade. Bake first and let cool. I used Jello cook pudding, 1 large box. Mix with 3 cups milk, stir constantly until it comes to a full boil. Let cook 5 mins. Pour into crust.

Banana Split Topping

1 container cool whip 8 oz

1 /2 pkg instant banana creme pudding

1/4 cup crushed pineapple

1/4 cup strawberry jam or ice cream topping

1/8 Hersheys Chocolate Syrup

Fold pudding into thawed cool whip. Do bot over mix, stir in remaining ingredients. Top pudding pie when serving and garnish with nuts and or a cherry.

OPTION would be to use banana pudding for the pie and Chocolate pudding for the topping.


Onion Stuffed Baked Potatoes Saturday, Apr 5 2014 

oniontatersWe consume a lot of potatoes in our house. My daughter will eat them baked for breakfast, when I let her. So we are always in search of new easy ideas. This one is actually best made on the grill. If it ever gets warm here in Chicago we will be making them outside! Here’s what you need….

Large baking potatoes

Onion sliced thin

Butter cut into slices ( best kept chilled)

Salt Pepper

Foil (lots of it)

Slice into the potato, careful not to cut all the way thru it. This can take some practice. Make about 8- 10 slices or cuts . Insert a slice of butter into each section then go back and add the onion, pushing it down between each section. Salt and pepper to taste. Wrap in foil, then wrap again, and if you dont want butter dripping in your oven, wrap again. Bake at 400 for about 1 hour or until done. These can also be seasoned with Ranch seasoning, Lawrys seasoned salt, or sea salt!! Make them on the grill, same way….


Kiwi Strawberry Layered Cheesecake Wednesday, Apr 2 2014 


Well it’s Spring. Or at least according the calendar, it’s suppose to be… I was in the  mood for something pretty. I love pink and green together. Strawberry and Kiwi unite in this decadent cake! It is strawberry cake layered with a beautiful Kiwi Cheesecake in the middle. What kind of frosting goes with Strawberry Cake ?? Kiwi cream cheese of course!! So let’s get started and get this beauty going!! 

Strawberry Cake Recipe

2 cups white sugar
1 cup butter, softened

4 eggs (room temperature)

2 3/4 cups sifted cake flour

2 1/2 teaspoons baking powder

1 cup whole milk, room temperature

1 tablespoon vanilla extract

2 tsp Strawberry Extract
1/2 cup strawberry jam

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
In a large bowl, cream together the butter, sugar and until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour and baking powder; stir into the batter alternately with the milk. Blend in vanilla , strawbery extract and strawberry puree. Divide the batter evenly between the prepared pans.
Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the center of the cake comes out clean. Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.

KIWI Cheesecake

2 (8-ounce) packages cream cheese, softened
1/2 cup sugar
3 eggs
1/2 cup sour cream
1 tsp vanilla extract
 1/2 DAVINCI GOURMET Kiwi Syrup  can be found here  http://www.davincigourmet.com

Preheat oven to 325 degrees F. Line a 9-inch round baking pan with parchment paper. Let the edges extend over sides of pan and then spray the foil with non-stick cooking spray.

In large bowl, beat cream cheese, sugar and vanilla extract at medium speed with an electric mixer until creamy and smooth. Whisk eggs in a bowl; add to cream cheese mixture. Blend just until eggs are incorporated. Stir in sour cream.

Pour batter into prepared pan. Bake for 45 minutes, or until the top just starts to turn golden.


Let the cheesecake cool completely in its pan on a wire rack then cover and chill for 4 hours.

KIWI Frosting

8 ounces unsalted butter, softened

 8 ounces cream cheese, softened

 4 – 5  cups powdered sugar

 1 teaspoon vanilla extract

1/2 Davinci Gourmet Kiwi syrup

In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract and kiwi syrup.

Place strawberry cake on platter, frost, place cheesecake on top, frost, place remaining cake on top and frost top and sides!
