Italian Beef

If you are from the Chicago area, you are very familiar with A nice juicy Italian Beef sandwich!!! There are all kinds of recipes on the web. Most use Italian dressing? Ummm might be good but, not what I’m talking about! It’s all about the cut of beef, the rub, and slicing it paper thin.Here is the real deal Italian Beef recipe!

What you  need

A good appetite…

2 – 4 lb beef roast  I prefer top round

Seasonings

1 tablespoon ground black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed red pepper

6 cups hot water

4 cubes of beef bouillon

Aunt Milles or Turano are some good local choices for the rolls.

Pre heat oven to 400 degrees

Mix the seasonings and rub all over generously. Seriously coat it!IBEEF1 You will have some left over, save.

Using a 13 x 9 pan add hot water. Bring to a boil on stove burner. Add bouillon cubes, until dissolved, now add remaining seasoning. Place roast ABOVE liquid on a rack in side of pan. Bake 20 mins per pound or inside temp is 130. Remove from oven. let cool slightly, then refrigerate for 3 hours, This is a must!  After roast has chilled, slice paper thin using a meat slicer. Heat au jus until it comes to a boil, turn down add meat simmer for about 1 min. IBEEF2

If you like you can also saute some green peppers to add to the beef.

Serve with some mozzarella cheese!!!
