Caramel Sea Salt Buttercream Frosted Brownies Thursday, Feb 27 2014

I am finding all kinds of this to do with Davinci caramel gourmet syrup!! Today I made some Caramel Buttercream frosting of course with sea salt. OMG!! Thank goodness spring is around the corner and we can all get out and WALK! lol . I topped brownies, recipe included. It would also work well on cake cupcakes, topped with mini chips like I did. Maybe some kind of caramel candy like rolos if you like excess lol Ok here’s the recipe!!

Easy One bowl brownies.

Nonstick cooking spray, for spraying the foil

1 1/2 cups sugar

1 cup (2 sticks) unsalted butter, melted and cooled

1 teaspoon vanilla extract

3 large eggs

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

 1 teaspoon Sea salt

1/2 teaspoon baking powder

Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with aluminum foil and spray with nonstick cooking spray.Stir together the sugar, butter, vanilla and eggs in a medium bowl. Add the flour, cocoa powder, salt and baking powder all at once and stir until just combined. spread the mixture in the prepared pan.Bake until the brownies begin to pull away from the edge of the pan and set in the center, 30 to 35 minutes.  Lift the brownies out of the pan with the foil and cool completely on a rack


Awesome Caramel Sea Salt Buttercream frosting

3 cups confectioners’ sugar

1 cup butter

1 teaspoon vanilla extract

1 to 2 tablespoons Milk

1/4 cup Davinci Gourmet Caramel Syrup

1 Teaspoon Sea Salt

n a standing mixer fitted with a whisk, mix together sugar and butter and caramel syrup. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes. Add vanilla, milk and  Sea Salt continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
Frost and top with mini chocolate chips if desired!


Fork Tender Cubed Steak! Thursday, Feb 27 2014

Oh these are quite delish!!! Serve with noodles, baked potato, maybe rice. Side of veggies, maybe  salad! Ok here is what you will need.

4 good sized cubed steaks

1 cup flour

1 pkg lipton onion soup mix

salt pepper


1 Preheat oven to 350
Heat olive oil in large (cast iron works best) skillet on med-med/high heat.
2 Mix flour, salt & pepper (I prefer fresh ground) in pie plate. Dredge cubed steaks in flour mixture.
Brown steaks maybe 5 min. per side – turning over a few times.
3 Place cooked cubed steaks in deep casserole dish. Drain oil from skillet, reserving steak/flour
residue. Mix soup mix with 2 C. water, turning heat higher, whisking to loosen browned bits in skillet.
(I sometimes add some of the leftover flour at this time…mixture does not need to be thick as it thickens in the oven).
Pour this mixture over cubed steaks.

Bake, uncovered, for 1 hour. Makes its own gravy!

Free Pancakes!!! IHOP National Pancake Day 3/4/14 Wednesday, Feb 26 2014 


I had the pleasure of attending a pre promo party for IHOP national pancake day at IHOP in Cicero, Il. !!!  Every year IHOP will give you a free short stack of pancakes. What’s the catch? You are encouraged to make a $5 donation to the local Children’s Miracle Network. Todays guest was Giovanni. An adorable 7 year old who has dealt with way more then his fair share. He has already had 18 surgeries in his life. He spent most of his first year of life at Ann & Robert Lurie Childrens Hospital of Chicago. He was born with Hip Dysplasia Has bladder issues, and other medical conditions. His Mother referred to Luries as her second home away from home. 

IHOP is doing wonderful things! They raised $2.9 million at last years National Pancake Day that went to childrens charities. 

Todays other guest was Latin singer Diana Reyes. Giovanni light up when she picked him up and asked him Como Estas? They proceeded to put on aprons and hats to start flipping pancakes!!! It was adorable and heart warming. To see someone so well known be so down to earth with this little boy! 

Sooo if you get a chance on March 4, go out to your local IHOP order a short stack. If you can afford more then $5 toss it in. It will be going to a very worthy cause! If you can’t make it but wish to donate go to

Java infused Yellow Cake with Chocolate Mocha Frosting! Tuesday, Feb 25 2014 


If you love coffee with your cake, you are going to love this one!!! It’s decadent cake !! I used Davinci gourmet Coffee syrup. It is marvelous! 

Heres the simple cake recipe

2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup sugar
3 large eggs, room temperature
2 teaspoons vanilla

1/4 cup coffee syrup
3/4 cup milk
Preheat oven to 350°F. Grease and flour 2 9-inch cake pans.

In bowl, combine flour, baking powder, and salt with a wire whisk.

Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until completely combines. Slowly add flour alternately with milk. At end of addition batter should be smooth. Divide between 2 pans.

Bake Yellow Cake Recipe for 20 to 25 minutes. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.

For a 9 x 13 pan – Baked at 350 degrees F. for 30 to 38 minutes.


The frosting! 

3 ounces butter soft

5 ounces cream cheese soft

1/2 cup cocoa

2 cups powdered sugar

1/8 cup coffee syrup

n a large bowl, beat together the butter and cream cheese with an electric mixer. blend sugar and cocoa with a whisk. With the mixer on low speed, add the powdered sugar mix a cup at a time until smooth and creamy. Beat in the vanilla extract and coffee syrup.

Frost and garnish with a sprinkle of instant coffee!!!

*variation… for chocolate cake add 1/2 cup cocoa with the flour, and an extra 1/8 cup coffee syrup

Herb seasoned potato wedges Monday, Feb 24 2014 


  1. Herb seasoned potato wedges. So easy an actually no fat!! 
  2. Spray pan with butter flavored non stick spray. Cut potatoes in half lengthwise and half agsin. If using large potatoes they made need additional cut to make a nice wedge.
  3. Preheat oven to 400. Place wedges on baking sheet. Spray wedges heavily with the butter flavored non stick spray. Sprinkle with sea salt, Rosemary , parsley,oregano, basil,mint,sage, thyme and hulled sesame seed. 
  4. Bake for 30 mins or desired crispness. Serve with ranch, queso dip, ketchup, mayo or your fav condiment!

Oh My Pecan Pie! Monday, Feb 24 2014

Oh my pecan pie! Too die for this stuff is da bomb!! Have I mentioned how good this pie is? Maybe top with whipped cream and a sprinkle of cinnamon! 


1 sheet refrigerated piecrust (half a 15-ounce package)

1 cup light corn syrup

1 cup packed light brown sugar

1/2 teaspoon salt

5 1/3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

3 large eggs

2 cups toasted pecan halves

Preheat the oven to 375 degrees F. Unroll the piecrust and place in a 9-inch pie plate. Fold the overhang under and crimp the edge with a fork or your fingers. Bake the crust until light golden brown, about 10 minutes. Cool completely on a rack. (Leave the oven on.)Whisk the corn syrup, brown sugar, salt, butter and vanilla in a medium bowl. Lightly beat the eggs in a small bowl, then whisk into the corn syrup mixture.Finely chop 1/2 cup pecans and spread evenly over the piecrust. Roughly chop another1/2 cup pecans and mix into the corn syrup mixture, then pour the filling into the crust. Arrange the remaining 1 cup pecans on top in a decorative pattern.Bake the pie until a knife inserted into the center comes out clean, 40 to 50 minutes. Cool completely on a rack.

Candied peanuts Saturday, Feb 22 2014 





Oh my!!!These tasty little peanuts will have you coming back for more!!! Pretty simple to make if you are patient! heres what you need

heavy duty skillet

2 cups raw peanuts

1 cup sugar

1/3 cup water

add all to skillet and cook on high until liquid becomes thick and starts to seize. Stir often.cook until they become sandy texture lower heat at this point. Let simmer removing pan on and off to equalize heat. Once the are a nice amber color sprinkle with sea salt and chili powder if you want them spicy . Pour out of pan onto parchment cool break apart. Eat!!!
