Special Occasion Coconut Cake Monday, Apr 29 2013

Now the majority of the time around here, if I am baking it has to have some form of chocolate in it! It has always been that way, and I’m quite sure it will always remain that way!! I do however like to go out of my comfort zone on occasion. Here we have what I would consider a “SPECIAL OCCASION” cake. Besides that fact it’s not chocolate , it is just loaded with 5 yes 5 sticks of butter, and well you shall see the rest very soon!!!

At hubbys request I whipped this up for the special occasion of him wanting it 🙂

Here goes, we all know it’s bests to keep hubbys happy 🙂

Ingredients

 3/4 pound (3 sticks) unsalted butter, at room temperature, 
2 cups sugar
5 extra-large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
 3 cups all-purpose flour, plus more for dusting the pans
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup milk
4 ounces sweetened shredded coconut

For the frosting:

1 pound cream cheese, at room temperature
1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1 pound confectioners’ sugar, sifted
6 ounces sweetened shredded coconut

Directions

Preheat the oven to 350 degrees F. Grease 2 (9-inch) round cake pans, then line them parchment paper. Grease them again and dust lightly with flour. ( I sprayed them)
 In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar on medium-high speed for 3 to 5 minutes, until light yellow and fluffy. Crack the eggs into a small bowl. With the mixer on medium speed, add the eggs 1 at a time, scraping down the bowl once during mixing. Add the vanilla  and mix well. The mixture might look curdled; don’t be concerned.
In a separate bowl, sift together the flour, baking powder, baking soda and salt. With the mixer on low speed, alternately add the dry ingredients and the milk to the batter in 3 parts, beginning and ending with dry ingredients. Mix until just combined. Fold in the 4 ounces of coconut with a rubber spatula.
Pour the batter evenly into the 2 pans and smooth the top with a knife. Bake in the center of the oven for 45 to 55 minutes, until the tops are browned and a cake tester comes out clean. Cool on a baking rack for 30 minutes, then turn the cakes out onto a baking rack to finish cooling.
 For the frosting, in the bowl of an electric mixer fitted with a paddle attachment, combine the cream cheese, butter, vanilla on low speed. Add the confectioners’ sugar and mix until just smooth (don’t whip!).
To assemble, place 1 layer on a flat serving plate, top side down, and spread with frosting. Place the second layer on top, top side up, and frost the top and sides. To decorate the cake, sprinkle the top with coconut and lightly press more coconut onto the sides. Serve at room temperature.

Bacon Pork Roast Thursday, Apr 25 2013

What’s better then pork??? Pork wrapped in pork!!! Haha Love this pork roast, it is so juicy and flavorful! Simple 

1 PORK ROAST 

8 SLICES BACON

LAWRYS SEASONING

Basket weave 8 slices of bacon 4 x 4 in out you know. I do these on a large piece of parchment, foil, ziploc whatever you have handy. Sprinkle seasoing on roast , Carefully flip the woven bacon on top or roast.Bake 425 for about 2 hours, or until tender and bacon is crisp!!

MMMMM Mama Marys PIzza Crust!!! Thursday, Apr 25 2013 

Ohh I know I have been away too long. It’s bad when you can’t find the time to blog! It’s a serious condition. Let’s call blog’aholics and see if theu have that 10 step program ready yet?? Naaa we do not need or want a cure!! HAHAHA OK so being said I’m behind, I did have to get this blog up!!! I entered a sweepstakes on Facebook awhile back. Mama Marys Pizza Crusts.. The timing was extraordinary!! We had just been discussing in our house how we need to find a ready made crust. Not generic, one that actually was worthy of all the lovely toppings we had in store for it. Pizza is kind of a big deal in our house. 2 kids nuff said! Soooo I entered this contest and was so delirious to get an email telling me , I won!! WOOHOO Sent off my shipping info and wow wow wow in just a few days, the guy in the big brown truck was knockin on my door!! I was so excited to open that large box, a major award!!! Here’s most of what I got….DSCN1288 I forgot to add the pretty red reusable bag, and the coupons!! 

After running kids here and there, I was able to toss a pizza together. I do apologize for not having time to get better pics 🙂 

The pizza was  sausage, pepperoni, pepper, onions, on a stone fired crust!! Perfect!! heated the oven to 450 then when hot turned down to 425. 10 mins on a large sheet and about 4 more on the rack to crisp it. Dessert was a very simple cherry  and another apple on yummy crusts.

DSCN1296 Now I do think next time I will take it up a notch. Me being the type to not leave well enough alone. Maybe do a chocolate layer under the cherry,  white chocolate possibly? then top with some extra icing. Melt in your mouth chocolate chip cookies NO EGGS!! Friday, Apr 5 2013

These cookies will melt in your mouth . Also known as snowball cookies. I know it;s Spring but oh my oh my they are just so easy and sooooo delectable!!!

1 1/2 cups (3 sticks) butter or margarine, softened
3/4 cup powdered sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
3 cups all-purpose flour

2 cups mini chocolate chips

powdered sugar

PREHEAT oven to 375° F.

BEAT butter, sugar, vanilla extract and salt in large mixer bowl until creamy. Gradually beat in flour; stir in morsels . Shape level tablespoons of dough into 1 1/4-inch balls. Place on ungreased baking sheets.

BAKE for 10 to 12 minutes or until cookies are set and lightly browned. Remove from oven. Sift powdered sugar over hot cookies on baking sheets. Cool on baking sheets for 10 minutes; remove to wire racks to cool completely. Sprinkle with additional powdered sugar, if desired. Store in airtight containers.

 

Pistachio Cheese Ball Friday, Apr 5 2013

My new fav place to order from online is heartofthedesert.com They have the best and I i mean best pistachios you can find anywhere! Who knew they grow them in New Mexico>> Not me but now that I do (thanks Ashley) I’m in love!!! They not only have the freshest they also have awesome flavors, and recipes on their site! I love nut covered cheese balls ok I know that sounds funny but, it’s true 🙂 Never having attempted one before, I seen a challenge set before me . I never realized how easy it was!

INGREDIENTS
3 cups sharp Cheddar cheese, shredded
8 oz package cream cheese, softened
2 tbsp Chardonnay, white wine, or dry sherry
1 tsp Dijon mustard
3 drops hot sauce or salsa
1/4 cup Heart of the Desert shelled pistachios chopped

DIRECTIONS
With mixer, blend shredded cheese, softened cream cheese, wine, mustard, and hot sauce together in bowl. Place into small bowl and chill, covered, in refrigerator till firm enough to handle (approximately 1/2 hour). Remove and shape into ball. Chop pistachios in a food processor; place nuts into dish large enough to roll cheese ball in. Cover outside of cheese ball completely. Serve with crackers. Enjoy!
