Tonights dinner is not just one new recipe but 2!! So instead of doing 2 blogs, I’m going to post them together. Now the Chile Pistachio Chicken is a recipe from  HEARTOFTHEDESERT.COM. They are located in New Mexico where they grow and process the most delicious pistachios!! The recipe is very simple!

3 LARGE chicken breasts

1/2 cup garlic green chile pistachio (place in food processor for 30 sec )

1 cup sour cream

Preheat to 350 spread sour cream on top of chicken and top with pistachios bake for about 20 min. DONE! Yum Can be served with rice.


1 head cauliflower cut into florets pre  boil 5 min

1 cup corn flakes crushed into fine crumbs

1/2 cup flour

1/2 cup parmesan cheese

1tsp garlic powder

1 tsp sal

2 eggs well beaten

Add all dry ingredients together in large ziploc

preheat deep fryer

place florets in beaten egg, then toss them in dry ingredients until well coated

deep fry until golden brown about 3 – 4 mins
