I love shopping at GFS. I am lucky that they are only a couple blocks away from me. Kind of like commercial style pick up store! Ok well for some things. Others more like I’m stocking up a restaurant!! There are a few things I pick up as staples. I love their large bag of mini chocolate chips, giant blocks of cream cheese, bulk bags of flour.Yesterday I ran in hoping to find some sort o egg noodles. I was soooo happy to find these Amish made wide egg noodles. So much better then your standard dried noodle! They will simply have to do until I get that lovely pasta attachment for my kitchen aid…haha  Of course I had to buy a giant 3 lb bag. Looks like there will be some creative soup making coming up!!Maybe even some side dishes! Yesterdays creation was  crock pot beef stroganoff.Not really much to brag about but certainly edible! Ohh I might just have to run bake today, those half bake sheets that were on sale just keep calling my name!!!

It was a great foodie pen pal month! I had the pleasure of meeting a very nice and talented foodie!! You can check her blog out here http://www.supremelydivinelife.blogspot.com Ashley sent me some great finds from New Mexico. Where they are stationed, I would like to thank her and her husband for the his service and their sacrifices for our country!! I would like to thank Ashely for her wonderful choices in the package she sent!! Ummm I was in pistachio heaven!! Who knew they grow and harvest such a wonderful crop there! They were so appreciated here I had to go to the website  HEARTOFTHEDESERT.COM and place an order 🙂

Chile Pistachio Chicken and Breaded Cauliflower Wednesday, Mar 27 2013

Tonights dinner is not just one new recipe but 2!! So instead of doing 2 blogs, I’m going to post them together. Now the Chile Pistachio Chicken is a recipe from  HEARTOFTHEDESERT.COM. They are located in New Mexico where they grow and process the most delicious pistachios!! The recipe is very simple!

3 LARGE chicken breasts

1/2 cup garlic green chile pistachio (place in food processor for 30 sec )

1 cup sour cream

Preheat to 350 spread sour cream on top of chicken and top with pistachios bake for about 20 min. DONE! Yum Can be served with rice.

BREADED CAULIFLOWER

1 head cauliflower cut into florets pre  boil 5 min

1 cup corn flakes crushed into fine crumbs

1/2 cup flour

1/2 cup parmesan cheese

1tsp garlic powder

1 tsp sal

2 eggs well beaten

Add all dry ingredients together in large ziploc

preheat deep fryer

place florets in beaten egg, then toss them in dry ingredients until well coated

deep fry until golden brown about 3 – 4 mins

 

Mini Chocolate Chip Cheesecake Bites!! Sunday, Mar 24 2013

Necessity is the  mother on invention!! Thats my Sunday morning motto 😉 Wanted to make some cheesecake, so I went with what I had and I would like to add these bad boys are more then certainly edible!!! In my quest for some decadent cheesecake I am proud to share this recipe, and it’s pretty simple to make :)Here it goes!!

2 (8-ounce) packages cream cheese, softened
1/2 cup sugar
3 eggs
1/4 cup sour cream
 1 tsp vanilla extract

3/4 mini chocolate chips

 

Preheat oven to 325 degrees F. Line 2 cupcake pans with 2 inch liners (makes 24)
In large bowl, beat cream cheese, sugar and vanilla extract at medium speed with an electric mixer until creamy and smooth. Whisk eggs in a bowl; add to cream cheese mixture. Blend just until eggs are incorporated. Stir in sour cream and chocolate chips.

Pour batter into cupcake liners. Bake for 35 minutes, or until the top just starts to turn golden.

Let the cheesecakes cool completely then cover and chill for 4 hours.

 

 

Raspberry Cupcakes with a little love!! Thursday, Mar 21 2013

I seriously have an addiction to baking!! Well that’s ok as long as Im not eating everything I bake!! LOL I love to shower people I care about with my Sweet Treats To Eat! It comes in handy to have family some what close by, to send them over to. 3 kids 2 adults, or friends with 5 boys,,,,etc etc Today I had the notion to make some raspberry cupcakes heres what I came up with!

 

2 1/3 cups all-purpose flour

1 tablespoon baking powder

3/4 teaspoon fine salt

1 1/2 cups white sugar

1/2 cup canola oil

2 eggs

1 1/2 cups whole milk

1/2 cup raspberry dessert sauce, puree works also

Preheat the oven to 325 degrees F. Line a regular-size cupcake pan with 18 cupcake liners.

 Sift together the flour, baking powder, salt, and sugar. In the bowl of an electric stand mixer with a paddle attachment, add the sifted dry ingredients and mix on low speed for 30 seconds. Slowly add the oil to the mixture until fine crumbs are formed. Add the eggs, milk, raspberry and mix on low speed for 1 minute. Stop and scrape the bowl and paddle, and then mix on medium speed for 2 minutes.

Fill the cupcake liners three-quarters full with batter (the little hearts were made by using the dessert sauce in the shape of a heart and tracing with a toothpick) and bake until baked through, about 20 minutes. Do not open the oven during this time. Cool cupcakes completely after baking.

Mini Chocolate Chip Granola Bars Wednesday, Mar 20 2013

This is a super simple, healthy recipe. The taste and texture are amazing!!  Make sure you have plenty of honey on hand, it uses a lot!!

4 cups quick cooking oats
 1/3 cup canola oil 
2/3 cup honey
1 teaspoon vanilla extract
 3/4 cup mini chocolate chips

 

Preheat oven to 350°F. Spread oats on an ungreased baking sheet. Bake for 15 minutes, stirring a couple of times. Allow oats to cool to room temperature. Combine remaining ingredients in a large mixing bowl. Add cooled oats. Spread mixture into a 9×13-inch baking dish that has been sprayed or oiled, pressing down hard to compact it.

Bake for 25 to 30 minutes, or until golden brown. Cool completely and cut into bars.

Baby Spinach rolled omelet Tuesday, Mar 19 2013

Ever get tired of the same old eggys?? I know I do! Looking for something a little healthier the other day I came up with this rolled omelet/ Now I know the rolled thing is not new but I used what I had to toss in and here is what I made 🙂

6 eggs 

1/4 cup flour

1 cup milk

salt to taste

About 1 cup chopped baby spinach

1/2 cup chopped tomato

1/2 cup chopped onion

1 cup shredded low fat cheddar

Preheat oven to 375 line baking sheet with parchment paper.

Whisk eggs until well blended, whisk in milk and flour

stir in spinach, tomato, and onion. Pour onto pan bake for 14 -16 mins

remove from oven cover top with cheese, pop back in for 2 mins or until melted.

The tricky part is rolling while hot. Pulling up on the paper as you roll does help! Roll and slice into 2 inch slices! ENJOY!!

$20 Produce Challenge! Friday, Mar 15 2013

I love a good challenge! Especially a “foodie” challenge. A friend and fellow foodie blogger came up with the 20 buck produce challenge. The object to see what 20 bucks will buy you. Ok maybe it is not fair that we have an awesome farm stand in our village!! Jansmas has an amazing selection of fresh fruit and veggies for this time of year! They have a very friendly will informed family run staff. Don;t see many family run business any longer, Ahh the good ole days lol Anyway I stopped in today and here’s what I got. Ok I did go over and spent almost $22 😉

3 yes 2 lbs of fresh strawberries

1 container blueberries

10 lbs red potatoes

1 head cauliflower

1 head lettuce

1 beefsteak tomato

1 large batch radishes

3 zucchini

1 package of 4 pretzels buns OMG labriola breads are amazing

1 loaf labriola ciabatta

So thats what $20 got me in the south burbs of Chicago!!!

 

Jamaican Jerk Chicken Panini with baby Spinach Sunday, Mar 10 2013

I am loving the Panini Maker!! Seems you can toss anything on it and it tastes good!! I love the challenge of  making the next one taste better then the last one! I guess you can say I am on the quest for the perfect panini Todays came pretty close!!! I baked an extra large chicken breast heavily seasoned with Jamaican Jerk for about 45 min. While that was baking I mixed a cup of mayo with about 1 TBS jerk seasoning. Let it set so the flavor soaks in good. Sliced the cooked chicken some what thin ( made 2 sammies)  top with some baby spinach and mozz spread a heaping coat of the jerk mayo on top bread . Popped in the panini maker for several mins and OMG YUM!!!!
