I’ve been on a Cherry Cordial kick lately.,…namely my fudge, one of my best sellers on Ebay 🙂 SOoo when I decided to kick up some brownies today it was a no brainer. I used a basic brownie recipe added some maraschinos and most importantly came up with this most amazing frosting. Now this will also work well on cakes, cookies, anything needing frosting 🙂 In my house all thats required is a spoon! lol Ohhh btw, have you tried the chocolate covered blueberries yet??? They are pretty good, or a term we like to use, is certainly edible 🙂 I am getting way off topic here, so here it is the recipe !!!

2 cups sugar
3/4 cup baking cocoa
1 cup canola oil
4 eggs
1/4 cup milk
1 1/2 cups all-purpose flour
1 teaspoon salt
 1 teaspoon baking powder

1 cup halved maraschino cherries

Preheat oven to 350 degrees Fahrenheit. Grease a 9×13 baking pan and set aside.

 In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in cherries.

Spread in pan bake 45-50 mins

 

Frosting

2 sticks butter softened

2 cups powdered sugar

6 Tbs milk

1 cup Maraschino Cherries

 

In stand mixer on low mix butter until creamy, slowly add sugar and milk. Beat on med until frosting has reached spreading consistency, fold in cherries.

Frost brownies, melt 1/2 cup chocolate chips drizzle on top.
