Cherry Cordial Brownies!!! Friday, Feb 22 2013

I’ve been on a Cherry Cordial kick lately.,…namely my fudge, one of my best sellers on Ebay 🙂 SOoo when I decided to kick up some brownies today it was a no brainer. I used a basic brownie recipe added some maraschinos and most importantly came up with this most amazing frosting. Now this will also work well on cakes, cookies, anything needing frosting 🙂 In my house all thats required is a spoon! lol Ohhh btw, have you tried the chocolate covered blueberries yet??? They are pretty good, or a term we like to use, is certainly edible 🙂 I am getting way off topic here, so here it is the recipe !!!

2 cups sugar
3/4 cup baking cocoa
1 cup canola oil
4 eggs
1/4 cup milk
1 1/2 cups all-purpose flour
1 teaspoon salt
 1 teaspoon baking powder

1 cup halved maraschino cherries

Preheat oven to 350 degrees Fahrenheit. Grease a 9×13 baking pan and set aside.

 In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in cherries.

Spread in pan bake 45-50 mins

 

Frosting

2 sticks butter softened

2 cups powdered sugar

6 Tbs milk

1 cup Maraschino Cherries

 

In stand mixer on low mix butter until creamy, slowly add sugar and milk. Beat on med until frosting has reached spreading consistency, fold in cherries.

Frost brownies, melt 1/2 cup chocolate chips drizzle on top.

Hersheys Kiss shaped chocolate filled cookies!! Friday, Feb 22 2013

I love the package of goodies Hershey sent me!! The kiss shaped cookie cutters are so much fun! Here’s what I came up with!!!

2-1/4 cups all-purpose flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup and 2 tablespoons butter

1/4 cup and 2 tablespoons vegetable shortening

1/4 cup and 2 tablespoons white sugar

1/4 cup and 2 tablespoons packed brown sugar

1 eggs

2 tablespoons milk

 

Filling:

3/4 cup and 2 tablespoons milk chocolate chips

1 tablespoon vegetable shortening

 

Mix flour, baking soda, and salt in a bowl until thoroughly combined. With an electric mixer or stand mixer, beat together the butter, 3/4 cup shortening, sugar, and brown sugar in a large bowl until fluffy; beat in the eggs, 1/4 cup milk, and 1 1/2 teaspoons of vanilla extract. Gradually beat in the flour mixture, about 1 cup at a time, until the mixture forms a soft dough. Divide the dough into 4 pieces, cover, and chill for 1 hour in refrigerator.
Preheat oven to 375 degrees F (190 degrees C).
To make filling, melt 1 3/4 cups of milk chocolate chips with 2 tablespoons of vegetable shortening in the top of a double boiler over hot (not boiling) water. Stir the mixture until very smooth, and remove the filling from the heat to cool and slightly thicken.

Remove one piece of cookie dough from refrigerator at a time, and working on a floured surface, roll the cookie dough out 1/8-inch thick, and cut out large kiss and half as many smallest kisses cookie cutter. Place half the kiss onto ungreased baking sheets. Carefully spread those kisses with about a teaspoon of the chocolate filling, avoiding the edges, and top each with the kiss that has the cut out,,make sense?. Gently pinch the edges of both cookies together to enclose the filling.
Bake in the preheated oven for 10 minutes; let cool for 1 minute on the baking sheets before removing to finish cooling on racks.

Don’t you love when you run across an awesome NEW foodie find?!?!? I had the luck the other day of finding something new I had not tried before, Davinci Gourmet coffee syrup!!! Now this stuff comes in lots of flavors, I went with the simple coffee flavor. I just knew I would find lots of uses for it, being that I love coffee!!!! I also had the good luck of getting a package in the mail from Hersheys!!! Ohhh it was packed full of awesome goodies! I will a blog on it later 🙂 It did have a Betty Crocker sugar cookie mix in it. I don’t normally use these. I knew I would have to kick it up a notch and kick it up is exactly what I did!! Here’s my Caramel Coffee sugar cookies!!!!

1 package Betty Crocker Sugar cookies
1 stick butter
1 egg.
Mix cookies and bake as directed on pkg.

Coffee glaze
2 cups powdered sugar
4 tbs milk
1 oz Davinci Coffee syrup

While cookies are still warm, not hot spoon on a heaping tbs and spread around. I then topped them with some Caramel Dessert sauce.
Very simple easy to do but ohhh so delish!!!!!DSCN0342

Buffalo Chicken Taquitos Monday, Feb 18 2013

These are some crazy good taquitos!! Adjustable to your taste! I popped 3 large chicken breast in the crock on low for about 5 hours, seasoned with salt and pepper

4 chix breast shredded

1/2 cup garlic hot sauce

1/2 cup milk

6 ounces cream cheese

2 tbs butter

1 tsp cajun spice

tortillas and shredded mozzarella

Ranch dressing for dipping

Heat oven to 425

melt butter. add cajun seasoning and cream cheese blend well

 whisk in hot sauce and milk. simmer for a few mins

add chicken. 

place about 1/3 cup chicken mix on tortilla sprinkle with cheese and roll brush a little oil or spray with non stick spray. place on a cookie sheet sprayed with non stick spray or lined with parchment paper

Bake about 15 mins, turn a couple times to brown serve with ranch

Off season Friday, Feb 8 2013 

Valentines Day is fast approaching!! Am I ready for it? Nope Have I baked and  decorated ? Nope It just seems to sneak up on me every year! Don’t get me wrong, I love Vday!! A perfect chance to show someone you love just how much!! It just seems like I’m coming down from the crazy rush of  the Holidays, a couple birthdays, and getting my kitchen back in order. Then all of a sudden Valentines is here!!! It just means spring is right around the corner, right? That being said I have being shocked this year at the flavors of fudge that are selling! I mean who doesnt love the aromatic aroma of pumpkin cooking on a brisk fall day? I sure do!! Here it is almost Valentines Day and my house smells like Fall!! So why not just go with it, cant fight it!! I stocked up and bought a ultra massive huge can of pumpkin sooo now Im off to search the net for some off season creative uses for it. My freezer is on the full side so dont think Im crazy of you get an off season gift or giveaway from me!!!! Hey maybe your freezer has more room then mine 🙂
