Taco Snack Mix Highly Addictive Monday, Dec 31 2012 


Getting the snacks lined up for a rockin New Years!!! Hoping this stuff will still be around by tomorrow night!! I need to hide it, it is that good!!! Ok variation on this crack snack is totally up to you or what you have on hand. Here’s what I tossed together….

2 cups cheddar snack crackers

2 cups pretzels

2 cups plain tortilla chips

1 cup dry roasted peanuts

 Use a brown paper grocery bag

Place all snacks in

Add 1/2 cup canola oil

3/4 cup taco seasoning.


Let set for 2 hours.

Oil might soak the  bag so place on wax paper. 

Store in air tight container.



Kettlekorn Caramel Corn No Bake!!! Saturday, Dec 29 2012 


Creamy Caramel Corn:

5 tbsp brown sugar
5 tbsp powdered coffee creamer
1 tbsp butter
1/4 tsp salt
2 tsp corn syrup
4 tbsp popcorn
4 tbsp oil
4 tbsp granulated sugar

In a popcorn maker, after heated add oil sugar and popcorn. Pop keep warm. In small saucepan heat the rest of the ingredients until bubbly. Quickly pour over popped corn in a bowl and mix well. After well coated pout on to a sheet of wax paper let cool and set. Store in airtight container. PLEASE be aware of the unpopped kernels. While corn is setting it is best at this time to try to pick them out.

Ham and Cheese Mac Bake Saturday, Dec 29 2012 

Who doesn’t love comfort food?!?!!? I have to say I’m not a big fan of the box mac n cheese. YUCK. This how ever is some serious I wan to dive in food!!! Great way to use up that left over Christmas Ham. Let’s get the fridge cleaned out and ready for some Mew Years Partying!!! Here goes feel free to drop in what ever else comes to mind…. I think any kind of veggies would work!! I happened to have some homemade bread that was on the verge of going to the birds, so I used it for the crumbs. Sorry birdies guess the leftover popcorn with have to suffice 😉
2 cups uncooked elbow macaroni
3 tablespoons butter or margarine
1/4 cup all-purpose flour
1/4 cup finely chopped green onion
1 teaspoon salt
1/2 teaspoon dried mustard
1/8 teaspoon pepper
2 1/2 cups milk
2 cups cooked ham
1 cup shredded sharp cheddar cheese
1/2 cup dry bread crumbs tossed with 1 tablespoon melted butter
Cook macaroni according to package directions; drain and set aside. In a medium saucepan melt 3 tablespoons butter over low heat. Add flour, green onion, salt, mustard, and pepper; stir until well blended. Gradually stir in milk until blended. Bring to a boil; cook, stirring constantly, until mixture is thickened and bubbly, about 2 minutes. Stir in macaroni, ham, and cheese. Transfer mixture to a 2-quart casserole. Sprinkle buttered bread crumbs over ham and macaroni casserole.
Bake ham and macaroni casserole recipe at 350° for 30 minutes, or until golden brown.

New Years Rainbow Cupcakes!!! Saturday, Dec 29 2012 

What fun!! Can also be made into a cake! My daughters birthday is coming up and I think we will change this up a bit for it! Instead of layered rainbow we will do a tie dye effect. Simply add the food colorings after batter has been poured into pans and swirl with a toothpick!! This is simply a white cake, divided into 4 bowls add food color and scoop into cupcake liners one color at a time. The trick is to make the layers even! Practice! Soooo here is the cake recipe I use. Again just divide the batter into as many colors as you like add food coloring scoop into cake pan or cupcakes fill 2/3 full and bake! I was lazy and used a pre-made red frosting )

1 cup white sugar

1/2 cup butter

2 eggs

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch


Ghirardelli Dark Chocolate Cherry Muffins Friday, Dec 28 2012 


1 1/2 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1/2 cup milk 
1 large egg
1/4 cup butter, melted and cooled
1/2 teaspoon vanilla
1 cup maraschino  cherries, drained
1 cup dark chocolate chips

Preheat the oven to 375° and line a muffin tin with cupcake liners or spray with non-stick cooking spray.

Drain cherries, dry on paper towel.
In a medium bowl sift together the flour, baking powder, salt, and sugar. Set aside.
In another bowl beat the milk, egg, butter, and vanilla. 
Add the milk mixture to the flour mixture and stir until combined. 
Fold in the cherries and chocolate chips.
Fill the muffin tins 2/3 full. Bake 12-15 minutes or until a toothpick comes out clean.
Allow to cool slightly and enjoy!

White Chocolate Cranberry cookies with orange zest! Thursday, Dec 20 2012 

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup butter or margarine, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large egg

1 (12 ounce) package white Chocolate chips

1 cup dried cranberries

zest from 1 orange


PREHEAT oven to 375 degrees F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chips zest and cranberries. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.


Chocolate cherry cookies Tuesday, Dec 18 2012 

1 cup butter

2 eggs

3/4 cup sugar

3/4 cup brown sugar

1 tsp vanilla

1/4 cocoa

2 cups flour

1 tbs baking soda

1 tsp salt

1 jar maraschino cherries


cream butter, add sugars vanilla, eggs one at a time mix in cocoa

mix flour soda salt ,,add to butter mixture

fold in chopped cherries (chopping is optional)

bake at 375 10- 12 mins

drizzle with powd sugar milk glaze if desired after they cool


Doggie stocking stuffers!!! Tuesday, Dec 18 2012 

Let’s not forget our 4 legged friends this holiday season!! Here’s a simple recipe for some doggie treats to stuff their stockings with!!! 




1/4 cup peanut butter
1 Tablespoon vegetable oil
1 cup water
2 1/4 cups whole-wheat flour
1 cup uncooked oatmeal

1. Preheat oven to 375F.

2. Combine peanut butter, oil, and water. Gradually add flour, then oatmeal. Blend.

3. Roll dough to 1/4-inch thick and cut out treats with a cookie cutter. Place on ungreased cookie sheet.

4. Bake 30-35 minutes. Treats should be crisp and not raw in the middle (break in half to check), so you might have to add a little more time.

Whats better then cheesecake,,,Cheesecake with candy bars!!! Adapted from bakersroyale.com
Line an 8 in pan with parchment paper, drape it over sides for easy lift out.
Preheat oven to 375
Chocolate chip cookie layer
½ cup butter, melted
½ cup brown sugar
1 egg
½ teaspoon vanilla
¾ cup flour plus 2 tablespoons
1 cup mini chocolate chips + 1/2 cup for top
1 bag butterfinger jingles chopped and candy bar will work!!!

To make chocolate chip cookie layer
Melt butter and let cool to warm. Add in brown sugar and mix to combine. Add in egg and vanilla extract and mix to combine. Add in flour and fold to combine. Add in 1 cup of mini chocolate chips and fold to combine.

Cheesecake layer
8oz. cream cheese, room temperature
1/3 cup sugar
1 egg
1 teaspoon vanilla
To make cheesecake
Add all ingredients in a bowl and beat until blended. Set aside.

Press 3/4 of cookie mixture into pan. Place chopped Butterfinger on top of cookie dough. Pour cheesecake mixture on top. Crumble remaining cookie dough sprinkle on top of cheesecake layer along with remaining 1/2 cup of chocolate chips all over top.
Transfer pan to oven and bake for about 30-40 minutes at 375 degrees F. Remove from oven set on wire rack to cool.

My version of Hooters Fried Chicken Strips!! Saturday, Dec 15 2012 


I have some major chicken lovers here!! These kids will eat chicken every day. Their favorite would have to be my version of Hooters. Its a pretty basic recipe!! Here goees

2 lbs boneless skinless chicken breast cut into strips

2 cups flour
garlic powder all to taste
2 eggs
1/2 cup milk

Mix seasonings with flour set aside

Mix eggs and milk with whisk or fork.

I use a deep fryer with canola oil

Dip strips into egg mixture , then flour coat well
Return to egg bath and then again into flour
Once oil has reached 375 – 400 drop in until golden brown,, about 5 mins.


Mix equal parts hot sauce and butter
I usually use 1/2 cup of each
I use Garlic hot sauce if using regular add Garlic powder to taste
and pepper to taste ( I use fresh ground from the pepper mill)
Heat on stove on low just until melted, mix and pour over chicken or serve on side
We serve ranch for dipping!!!
