I had the pleasure this month of exchanging emails with a couple very nice ladies, One was Kelsey from Minnesota, here’s her FB swap page https://www.facebook.com/NorthernMnFoodSwap
I was excited to open her package all decorated foodie style!!! Cute! Here’s what I found!!

Loads of goodies in there!! WOWZA!!
Ohh my weakness if fudge, I think she knew that 😉 She sent some her Mom makes. Wonderful wonderful fudge!! Lots of flavors!

My daughter and I did a taste test, tea party style HOW FUN!!

Her Mom is not the only talented foodie, Kelsey is a canning wizard! Something I keep meaning to try!
Her Cherry Sauce was incredible on pancakes!! num num
She also sent a Raspberry Mousse kit that was sooo decadent wow!

Ms Kelsey went above and beyond!! She makes her own Vanilla!! How cool is that?!?!?!
Besides all this there was kettlecorn that was just gone in a flash!! Lots of candies, ohh those adorable delish maple leaves!! Im sure I probably forgot something there was just so much!! Ohhh and I dove in before I realized I should be taking pics!!!! lol Thank You Kelsey for a wonderful October Pen Pal experience!!! You da bomb!!!


2 Ingredient Pumpkin Cake!!!!! Thursday, Oct 25 2012 


1 can puree pumpkin ( not pie filling)
1 box yellow cake mix

Blend together on med speed on mixer for 2 mins, until well blended
Bake at 350 in a 7 x 11 pan for 38 mins,
I used a cream cheese frosting for this one you can also make an apple cider glaze
Cream Cheese frosting
1 pkg soft cream cheese
1 tsp pumpkin pie spice
4 cups powdered sugar
4 – 6 tbs milk
blend all until spreading consistency.
I cut the cake in about 4 inch pieces and layered with frosting.

Apple cider glaze
1 cup powdered sugar
2 T. apple cider
1/2 t. pumpkin pie spice

In a small bowl blend all ingredients until smooth. Pour over Pumpkin Cake letting it drizzle down the sides of the cake. Let set before covering.

Feel the heat cookies! Monday, Oct 22 2012 

1/2 cup cocoa

6 ounces semi sweet chocolate chips
3/4 cup flour
2 teaspoons Cinnamon
1/2 teaspoon cheyenne Pepper
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (1/2 stick) butter, softened
1/2 cup granulated sugar
1/4 cup firmly packed brown sugar
2 eggs, lightly beaten
2 teaspoons McCormick® Pure Vanilla Extract
1. Preheat oven to 375°F.. Mix flour, cocoa cinnamon, cheyenne pepper, baking powder and salt in small bowl.

2. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in semi sweet chocolate. Drop dough by rounded tablespoons or medium cookie scoop 1 1/2 inches apart on parchment paper-lined baking sheets.

3. Bake about 10 minutes or just until cookies are set and slightly cracked on top. Transfer cookies on parchment paper to wire rack; cool completely.

Hershey Bar stuffed butter cookies Wednesday, Oct 17 2012 

8 ounces unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
2 – 3 full size Hershey bars
1 1/2 teaspoons pure vanilla extract
1 large egg yolk
These cookies will melt in your mouth!!! They can be baked as single cookies, topped. filled with just about any combo of your choice!!!!

Beat the butter, sugar, salt and vanilla together until smooth and creamy.

Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.

Add the flour and mix just until incorporated.

Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.

Turn onto a sheet of plastic wrap and roll into a square log, wrap up and refrigerate for several hours or freeze.

Before baking, preheat the oven to 325°F.

Line your baking sheets with parchment.

Slice cookie dough into 1/8 inch slices
place 2 squares of candy bar on top
trim to same size as candy bar,
top with another slice and again trim,
top with 1 square of hersheys on top

Bake 16 – 18 min until they just begin to brown slightly,
cool and enjoy!!!!!!!

Decadent Milk Chocolate Pots De Creme Thursday, Oct 4 2012 

Ohhh lala these are so decadent!!! Garnish with some whpped creme and chocolate shavings after set!! So easy even my sister could make them!! Sorry sis if you are reading this! But, you will thank me after you make them!! HAHA ok here is the super simple recipe!!
2 Cups high quality milk chocolate chips ( use the good stuff please!)
3/4 cup whole milk
1/4 cup butter
Place chips in blender. In small saucepan on low heat, stir often until just starts to boil. Slowly pour into blender, place cover on. Blend on high until smooth about 1 min. Pour into dessert dishes. Chill at least 3 hours until set.
Makes 4 1/2 cup servings.

Last night I had the pleasure of an evening out for a media dinner at Seasons 52 in Oakbrook, Il to experience their Autumn Menu. What a pleasure it was!! The ambiance, food, wine, and wonderful knowledgeable helpful staff made for a very memorable experience. The attention to detail was second to none.

The Vista Hills Orange Pinot Girls,an exclusive to Seasons 52 was at the top of my list! A must try !! This was paired with Portobello Mushroom Flatbread and Double Hummus & Sea Salt Lavash.. Ohhh I was feeling very spoiled already!
The wine pairings were just right on.

After introductions from some of the most helpful friendly staff I have run across, and a webcast making us knowledgeable in the Autumn Menu we began with the first course. Cider Glazed Grilled Chicken Skewers paired with a Ferrier Andiron Semillon. YUM! The spice added to the pumpkin seeds, made for just the right amount of heat!

The second course was Maple Leaf Farms Sesame Duck Salad paired with Avanthia Godello. I am not a big fan of Duck. I am glad I had the chance to try this delicious salad. It was paired very nicely with the wine.

By this time we were already starting to feel a bit full. Gracious portions abound! Here comes the third course, my favorite if I had to pick one from the menu!
The All natural Piedmontese Steak. I would suggest going with med/rare on this. Delicious vegetables accompanied this choice cut of beef!! Paired with Tillia Banarda. The fact that all courses served at Seasons 52, remain under 500 calories is just remarkable to me!!

Ok Fourth Course of the evening was the Grilled Quail. Another not on my favorite foods list but, I would have to say I am glad I had the chance to give it a sampling! It was paired perfectly with Michael David Petite. A wine some have requested to bathe with George Clooney in. Nooo I did not make that request though it did make for a mental image that wont soon be forgotten!!

Last but by no means least was the Mini Indulgence Desserts. It was just too difficult to pick just one!! My dinner companion for the evening ( Chicago Foodie Sister Carrie) and I had to over indulge ourselves here! Ok, I have to say from what I observed, all who were there took the same pleasure! I don’t think I could pick a favorite here. The serving size was perfect after such a satisfying meal. Let me summarize with Belgian Chocolate, Pumpkin decadence, Pecan to die for, Red Velvet, Cannoli out of this world. I am sure I am forgetting something here and the pics surely speak for themselves!!

Falling behind Tuesday, Oct 2 2012 

Sorry I haven’t been keeping up lately. Ahhh the days seem to fly by. I love Autumn the coolness in the air, the beautiful colors of the changing leaves!! I also REALLY enjoy being able to turn the oven on and doing some major baking!!! I will get caught up soon! Tomorrow will be an adventure,I will be posting about it very soon!!

Foodie Pen Pal Reveal!!! Monday, Oct 1 2012 

Ohhh YES I am so loving the foodie pen pal exchange!! It was so much fun picking out things to make and buy for Erins package! I hope shes enjoying it as much as I enjoyed putting it together. Now on to my package from Martinus, here’s his amazing website and story 🙂 http://www.300poundsandrunning.com Got my package today on the 13th, had to get to the blog (incase there was a problem with pics before I eat all of this yummy stuff!) Ok so I get the package all excited what’s in the bag inside???

On the top of the bag was a very nice hand written note letting me know what was in the bag and the lovely foodie items came from a near by Farmers Market. I am so jealous, I wish we had such a nice one by me!!

So I dive in first I find this amazing Kettle Korn

Complete with a disclaimer that is WAS highly addictive. Yes WAS it’s already gone 🙂

Next was the super fresh and amazing Maple Peanut Brittle num num

Ohhh whats this yessss DIJON HORSERADISH ohhh this stuff is sooo good. Had to try it out dipped a few things in it just to try. Have to pick up some turkey for a sandwich, it will be amazing!! It kicked up some fries soooo tasty!!

Where has this stuff been all my life??

My weakness has and always will be fudge, any and all kinds this has to be right up there in the top few I have ever tried,,,,, PUMPKIN FUDGE!!!!
