Here’s a pretty simple Granola Bar recipe. My son will eat any combo of PB and Chocolate.Who wouldn’t? OK I have my limits, I think this boy might even eat some fish if it had pb and chocolate on it. Hmmmm Na that might be pushing it a bit, ya think?!?!  But in this fast paced world of prepared junk food, it is nice to pop out some healthy choices for the kiddos. I think I will try a couple alternates on this recipe to get my other picky eater to give them a try. She’s the fine chocolate type, guess she gets her taste from me 🙂 Though I do not remember having such a taste for dark chocolate at such an early age! OK here’s the recipe!!

1/2 cup creamy peanut butter
1/3 cup honey
1 egg
2 tablespoons  vegetable oil
1 teaspoon vanilla extract
3 1/2 cups rolled oats, quick cooking
1/2 cup brown sugar, packed
3/4 teaspoon salt
2/3 cup  milk chocolate chips

Preheat oven to 350.

Beat first 5 ingredients until well blended.

Combine oats, sugar & salt; add to peanut butter mixture and mix until sticky batter forms (about 1 minute).

Stir in chocolate chips.

Press into a 13″ x 9″ pan coated with cooking spray. Use a piece of wax paper to help press it into an even layer in the pan.

Bake 12-15 minutes. Cool completely and slice into bars
