Chocolate Graham Cracker Crust

2 1/3 cups graham cracker crumbs
3/4 cup melted butter
1/3 cup powdered sugar
2/3 cup cocoa powder
Directions:

Mix together and press into 9-inch pie plate.

Freeze until ready to use.

Pie Filling

Large Box Jello pudding mix follow directions for pie (not instant)

3 cups milk a

add pudding mix

stir on med heat until boils

let set 5 min

pour into crust

After pudding cools top with cool whip

Next was the fun part, separating all the m&m’s by color

There is so few brown ones!! Never really noticed before!

Start at the outside and place them one by one all the way around the outside edge , slowly work inward color by color, time consuming by very cute when done!

It’s almost Fall and we had to start early on the dipping of the apples. The kids keep coming in every few,,,are they done yet!! I think I will give in even though  they are not set, because 5 mins of waiting for 2 ,10 year olds is just such torture for me not them! lol

Relatively clean food? Sunday, Aug 26 2012 

Has anyone ever heard the term “relatively clean” food before? We got a postcard in the mail yesterday for a local restaurant. Starts out with how long they have been in business then conti nues with Serving relatively clean food to our children. I’m sorry when it comes to my kids I prefer simply clean food. Maybe it’s just me but the wording there maybe was suppose to be funny but I feel it was an epic fail on their part! I like to think I have a pretty good sense of humor but then again once I hit 50 I’m also getting AARP in the mail and thats not so funny either!!!

Blueberry Fudge Sunday, Aug 26 2012 

Ohhh I so love fudge. Kids and hubby usually wont eat anything that isn’t chocolate or their favorite chocolate and peanut butter, I am a confessed chocoholic but on occasion I like to indulge in so gourmet flavored fudge. This is one of those recipes! It is super sweet, cut small pieces 😉 Enjoy!

1 cup blueberries
3 cups sugar
1/4 cup light corn syrup
1 1/4 cups milk
4 tbsp butter

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

Put the blueberries into a blender and blend into a puree.

In a large 3 quart saucepan, combine blueberry puree, sugar, milk, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Do not stir. Remove from heat. Do not stir.

Cool to 120F. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

This one is so easy you wont be disappointed!!!

1 can sweetened condensed milk

2 cups heavy cream

1/4 to 1/2 cup Ghirardelli cocoa

use mixer just until well blended

add to ice cream maker for 30 min

That simple but ohhh sooooo good!

Oreo Cheesecake Sunday, Aug 26 2012 

Ohh this is one of my all time favorites!!  I make an Oreo crust, true Oreo crust, Meaning I take about 2/3 of a pkg of double stuffs. Pop them apart and remove the cream filling, set aside trying not to eat to many of them 🙂 This is the most difficult part! Crush the cookie part, (reserve about 1/4 cup for topping) pop the creme filling in the micro at 30 second intervals, until smooth add to the crumbs in a pie pan. Pop in the freezer while preparing the filling.

Filling

8 ounces cream cheese
1/3 cup sugar
1 cup sour cream
2 teaspoons vanilla
8 ounces Cool Whip

Beat cream cheese until smooth

gradually add sugar

blend in sour cream and vanilla

fold on thawed cool whip

spoon into cookie crust

sprinkle top with remaining crumbs.

I topped it off with an Oreo Brownie cut diagonal

A couple whole cookies would make a nice garnish also!

Chill for 4 hours

Cream Cheese Sweet Peppers Saturday, Aug 25 2012 

Bought these beautiful sweet red peppers. Ahh what to do with them….

Kept thinking about cream cheese.,so here it goes

1 pkg cream cheese softened

minced onion sauteed until translucent

paprika

sea salt

fresh ground pepper

Whip cream cheese until fluffy add onion, and seasonings.

Cut top off pepper and gently remove seeds, slit pepper lengthwise.

Use frosting bag (ziploc) with tip cut off will also work) fill with cream cheese mixture.

Spray foil with non stick spray place stuffed peppers on heavy duty foil. Place on grill ( I set all 4 burners on low) for about 20 min.

These are good hot also good the next day sliced and served cold!

4 Ingredient Cookies Saturday, Aug 25 2012 

1 (18 1/4 ounce) box cake mix
1 (8 ounce) container Cool Whip
1 egg
confectioners’ sugar (for rolling)
Directions:

Mix all ingredient together until moist, batter will be thick.

Form into small round balls. Batter will be sticky, easier to do if hands are wet with water.

Roll in confectioner’s sugar.

Bake at 350 degrees for 10-12 minute.

Cool on pan a few minutes before removing.
