Onion Stuffed Baked Potatoes

oniontatersWe consume a lot of potatoes in our house. My daughter will eat them baked for breakfast, when I let her. So we are always in search of new easy ideas. This one is actually best made on the grill. If it ever gets warm here in Chicago we will be making them outside! Here’s what you need….

Large baking potatoes

Onion sliced thin

Butter cut into slices ( best kept chilled)

Salt Pepper

Foil (lots of it)

Slice into the potato, careful not to cut all the way thru it. This can take some practice. Make about 8- 10 slices or cuts . Insert a slice of butter into each section then go back and add the onion, pushing it down between each section. Salt and pepper to taste. Wrap in foil, then wrap again, and if you dont want butter dripping in your oven, wrap again. Bake at 400 for about 1 hour or until done. These can also be seasoned with Ranch seasoning, Lawrys seasoned salt, or sea salt!! Make them on the grill, same way….
